R3 and MIDI (channels?)

Hi,
I am new to MIDI and do my first steps ... recording two tracks with n-track (midi usb) and two different sound works fine.
But when I play the two tracks both use only one sound by MIDI and not the both set while recording.
If I change the sound to another from the r3 midi list in n-track the same - sound is changed but for both channels.
Do I have to use/set the channels?

See page 65 of the owner's manual under the section titled "MIDI channel setting – use the R3 as a multi-timbral sound module."

You will need to create a new program that has the sound you want for Timbre1 for one midi channel, and a different sound for Timbre2 for the other midi channel. The R3 has no programs that will match the combination you want, so it's up to you to create a program that has the corrected timbres assigned. You will still get the audio mixed together though, since the R3 only has one stereo output pair. If you want two separate mono tracks, you need to also modify the timbres so that one is panned full left and the other panned full right.

How does one deal with that in practice to use the preferences of MIDI? Do I have to render the MIDI parts to WAV, record other channel with MIDI, render to wave ... Maybe change notes in MIDI, render to wave ...
Do you know a better solution?

That is the most common solution. And the most straightforward way.

MIDI has advantages in changing the note content over audio. But audio has advantages too.

Work with MIDI, but record to an audio track when you want to start working on the next part.
If you keep the MIDI part just muted or disabled, you can always revisit it and re-record the audio later.
