Hopefuly someone can help me with this. I am trying to find a keyboard that lets me assign .wav samples to certain keys.

For example: I have three .wav samples. I would assign sample 1 to key C1, sample 2 to key D1, and sample 3 to key E1.

Does a keyboard exist that does this?

I am currently using a Axiom with a laptop running Kontakt to achieve this but this set up has proved unstable in a live setting.

I'm not familiar with the gadget myself but from what I understand the "Korg MicroSAMPLER" should be able to do that. I imagine the M3 can do that as well but again, I don't own either keyboard.

Get a M3 Wink
You can make a program that have a multisample layered like you want:
every note Wink
you can set a different wav (ksf after importing the wave) to every single note, even on 4 velocities range Wink
