1. Animoog

IMO Moog's Animoog is one of the best Synth Apps for the iPad. Simple UI and great sound with rich set of sound shaping posibilities. Value for money is very good.

I'd add WaveGenerator, Magellan, NLog Pro, Sunriser, ThumbJam, Addictive Synth, and Grain Science to the list.
