I don’t know much about FM synthesis and MOD-7 VPM, but I feel KRONOS FM piano sound varies only linear volume per velocity. even load same sysex.

YAMAHA DXEP feels opening filter, slight distorted or resononsed per velocity increase.

Can get touch sensitive sound only editing few parameter?

e.g I-A 055 MOD-& E.PIANO
