When using condenser mics (and onboard phantom power) and using the gain knob, I have a difficult time getting a decent level. There's almost nothing and then I hit a spot and the signal is wayyy too hot. Less and I have to get too close and get proximity issues and still have WAAYY too much headroom then. Any suggestions?

Have you tried playing around with some compression?
It usually sorts this kind of problem out.

I bought myself a Samson C-Valve pre-amp and it makes ALLL the difference in the world. Now I don't need compression on the vocals, I just dial in the gain, and it's usable with just a wee bit of eq.
