I'm looking at buying a mixer to get my hardware into Ableton and Ableton into my hardware. There are a lot of mixers with USB and Firewire, but not a lot of details on what exactly is exposed through the interface.

Here's what I'm trying to do:
Soft-Synths in Ableton out to a hardware mixer (with Sends)
ESX into the hardware mixer
Mic into the hardware mixer
KP3 and a Gristleizer on the FX channels of the mixer (returning to the mixer)
Master going back into Ableton for recording.

Is this all doable or do the "USB" mixers just do a simple stereo in: stereo out interface?

Generally the USB mixers will only have stereo in and out. Most commonly the ones with more channels are FireWire mixers/interfaces.

I don't know personally of a mixer that does all that you ask. But that most certainly doesn't mean there isn't one.
You may find a better combination though by buying a seperate mixer and audio interface. Particularly a mixer with insert points on the channels (so you could connect your interface ins and outs between the mic pres and the channel strip), or one that specifically has recording busses. The KORG Zero line seem very good but I believe they've been discontinued.

totally do-able with a decent usb 2.0 or firewire multi-channel mixer, you might need a midi-usb cord or some regular midi cords to send the time clock from your computer or midi keyboard to your hardware
