I've saved a bunch of combination sounds in banks M and N. Will I lose those when I load the Moss board? In the moss owner's manual (pg. 7) it says that "when you load Moss.PCG all the current contents of internal memory will be erased and overwritten".

No. This only goes for program bank F, as that becomes your "MOSS" bank.
Interestingly, I believe the bank reverts to your previous bank F patches if you take out the MOSS board.
