Assuming the UI is same as Pa900,
Go to Global>Mode Preferences (or Shift+Chord Scan)
Select the preferred method for chord recognition (Fingered (3 notes) by default)

Try the shift trick with other buttons as well. It's like a right click on Windows. Made it much easier for me to navigate quickly to any setting without having to remember the entire menu layout.

Not on mine.
My keyboard has "phones" written with a small arrow pointing down, where you have the circular bump. (I got mine in the US)

Select any of the upper 3 tracks.
Now press Shift+ Upper Octave (either +/-)
It'll take you to the menu where you can change octave of each track individually.
