Pick an organ sound you want to use, and go to the effects menu where you pick the effects. Choose one of the rotary effects and click on the tab where you see all of it's parameters. There are a few pull-down menus where you can choose the pitch bend lever "+Y" or "-Y", which will set that control ...

Thank you, Thoraldus, for posting about the cue mode editing that can be done in style record mode. I find it so much better to have it set to "Next Measure, First Measure" on the variations and fills and break. My timing is good enough that I was usually hitting it right with the default settings ...

I figured it out mostly. The FX Send is actually set up with each drum kit, in the Voice Mixer tab when editing the kit. This is why it is apparent that some kits have more effects going on than others.
