MS-20 controller and new version of Legacy
Does anyone know if the MS-20 controller will work with the new version of the MS-20 Legacy software? Will it sync up and work using the cables too?

Yes, even de cables.
As to the PC/Mac version, there has been no difference in how it operates in any version (and I have used every version since the first one).
Obviousbly it will need to run through a powered hub on the iPad, as the iPad can't supply the required power. But otherwise it works fine and patched cables appear on the iPad screen just like they do on the PC/Mac version.
