The full global menu is found by pressing GLOBAL buton then MENU at the lower right of the screen.

You'll see a larger selection of global settings to choose from, page 2 is controllers, including damper polarity and assignments for the aux pedals and expression. That is where you'll be able to reset the pedal, and save it to work with your current pedal.

Also be sure to change your memory protect settings to off, otherwise any edit you make to global or program tweaks will not be saved.

A side issue that often trips people up is that all pedals are not compatible. Tritons looking for one that is NOT a half-damping 3-position pedal as some are. Those are compatible with some kurzweil and Yamaha stage pianos; they can be recognized by the two black rings on the jack (trs stereo plug).

Triton wants a simple on-off; it will have. Jack with only one black line. It can be open or closed and changing the global settings will make it work properly if it doesn't do so now.

BOSS makes a really nice dual foot switch that will give you control of both switch inputs in a very sturdy and roadworthy package. The switches can be set in several configurations including momentary/latched and selectable polarity.
