Can anyone recommend a book or web site that explains the mysterious world of FX?
The various manuals make the assumption that I can readily hear the results of a setting, but I'm not very clear on what I should expect, and how it affects the music.

You can search for the different types of effects like reverb and try and understand what effect all the different parameters have etc.
I found that when I bought an eventide eclipse I got a better understanding of how things work. Try reading the manual some:

It seems like it's written from an electrical engineers viewpoint, where we take this signal and run it around here and add this and that etc.
One of my favorite algorithms is where you take your original signal and put it in the middle. Then add 4 more copies panned hard left, right and mid left, right and each one detuned a few cents for the mid and a few more for the hard.
You can take all the theory you want though but you need to actually hear it to see what effect it has. Like EQ you do a real extreme version to hear it then fade it back into it's normal usage and you know what to listen for.
