Dear Sirs,

I purchased PA600 in the year 2015. No updates done from my side.

Now, can i update using the version 2.1 directly
or
I have to update the previous updates then only i have to go for 2.1 ?

You should be able to. I see no reason why not.
Just follow the instructions.
