How can I change an instrument on just one variation in a style?

Similarly, how can I adjust the volume on that instrument without causing the volume on all four variations to change?

I'm not sure the answer to your first question, but for the second question, you can adjust individual track volumes for each Style Elements by going into edit mode and modifying the Expression for each Track.
