hi, sorry this is a noob question
When I start playing a stanard organ program preset it sounds flat. Once I push up the modulation with the joystick it obviously modulates, but when I move it back down and try and play another note it's still modulated, even though I want it flat?
I restored my sounds and still the same.

You obviously talking about the rotary effect (leslie cabinet emulation) in organs section.
The way the rotary effect is applied on Korg is one way up the wheel to activate it and one way up again to disable it . This is the way it's done since Trinity (1995) and it's the same for other models as Triton,Karma,m3 etc...

Can you recommend any articles? I've been playing piano since I was 6 but organs totally mystify me. I'm learning purely by doing right now, messing around with different sounds in my band, but a basic primer would be great.
