Is there a Panic button (combination of buttons) to kill all sounds?
No, but you may be able to find an in-line "black-box" solution. ANATEK used to make a MIDI panic button - I don't know if they're still in business, but that product would send an all-notes-off to midi-in to eliminate hung notes.
