I'm trying to record my own sounds, but when I start to record it's an whole orchestra of sounds that starts playing. I want to play for myself. How can I remove those sounds?

To begin with you want to load up any bank which isn't the ROM bank, this should give you a clean slate.

Next I think you are pressing the record button rather than the sampling button. The record button is for the pattern sequencer, the sampling button is for recording your own sounds.

I hate to be a pain but you should really think about reading the manual before going any further.
