I just got an SV-1 and the piano sounds are less than inspiring. Are there tweaks that people have done to make them sound better?

There are some additional piano sounds in the soundpacks that improve on the stock sounds supplied with the SV-1
http://www.korg.com/us/support/download/product/0/240/#software. You'll need a computer with the correct drivers / editor to connect to the SV-1 and install the new sounds.

I would say, though, that the Acoustic Grand piano sounds are not the greatest strength of the SV-1, even after installed the additional sound packs.
