Master volume will only control output level on L/R outputs and headphones out. As far as I know there is no way to directly control the level of outputs 1/2 internally. Thank you. Sysex would be the way to go but this won't work if I use my own samples within the program.. I hate to find out that this otherwise nice keyboard has some limitations that make our lives harder than necessary.

I am not trying to create a realistic sounding drumset. But if I did I would probably use stereo samples too. With all due respect I think your assumptions about real drums are a bit superficial because you DO need to have a true stereo image for this either by using room/overhead mics or at least ...
