There's probably just some simple principal of cables that I'm not aware of but I'm confused because when I use this cable http://www.sweetwater.com/store/detail/GoldTRSXLRF06 With a MIC to the KP3+ it's really quiet and if I touch the XLR casing at all on the cable it makes a really loud buzzing ...

Maybe it's a DOA. Do a factory reset and disconnect USB/PC connection and If lowering the input volume and using different sfx it still sounds distorted. Then return/exchange it to the retailer, test and listen other ones if the same, else refund. Alright the factory reset seems to have made it ...
