How does overdubing work vis a vi the foot peddle?

Hi guys. How does overdubbing work with regard to the already recorded foot peddle? For instance, lets say I record a track to track 1 with my foot peddle depressed the entire time and then overdub on top of that track with my foot sometimes depressed and sometimes up? Do the originally recorded notes remain sustained or do they change with the new peddling from the overdub?
