First, I wasn't able to find any reference to responsiveness via velocity curves in the module's manual so that's something that may have to be set on your keyboard.
You want to look for a v-curve (send) on your keyboard that looks like either the right side of a bowl (concave to the right) or like a backwards S lying down (humping up to middle volume but then concave to right as in the other curve). Either of these curves should make it harder to hit the maximum velocity (127) that appears to trigger the hold function. That's key - you don't want max velocity if you can help it and your keyboard may have some sort of limiting parameter that will keep that from happening.

There are 4 (!) memory protects for prog, combi, drums and FX (manual pg 70) make sure they're all off when you try your reset functions.

There's some sort of selectable "echo" function that enables a sort of MIDI THRU function from the MIDI ports, of which there are two. Lets make sure that the MIDI is going into Port "A" and that the function is set to "Native". (manual page 72)

RX (receive exclusive - page 74) switches should all be set to ON... or all OFF... but for now lets say on because you want the changes generated internally as part of the reset process to be able to work and setting them to off is kind of like memory protect. I don't know that the reset routine works with a sysex message but lets give it a chance. You can always run the reset routine again with these guys set to off.

On page 76 you have several reset routines - and so far I think we've just been trying to get it back to "Factory". This is a last ditch try, and is based on the fact that you're about to put a gun to it and put it out of its misery - do the init reset that overwrites everything to zero -- GM Mode ('uz, hey, GM is the one thing that's working right) , then do the "Factory" reset.

As to worship w/o sustain pedals... organ, man! Five or six centuries of no sus pedal and they got the job done. Listen to Faure organ music to see how it's done. No sustain on a pipe organ, or a B3 for that matter, it's just a matter of technique... and Notre Dame's reverb.
