If I understand what you're trying to do, the ESX will chop a phrase into beats either at a beat or I think it will look for quiet parts between beats. I forget and I'm on the EMX now and sold my ESX. You can then call out each of the slices and play them or sequence them. But honestly it's an enormous pain in the ass.
As for the KP3, again, sorta. You can overlay a gate effect on a beat that will mute bits of it in a pattern. There's also the feature that will loop the last bar or two and you can make the loop shorter and shorter.
Korg MicroSampler (which I also owned for a while) has several very intuitive and useful beat sampling and slicing features that let you put the slices onto keys but the knobs and build quality are so frustrating that it's almost a no-go. They're cheap though so it doesn't cost much to find out if you can put up with it.
I don't own Maschine but I think it's more or less designed to do this out of the box. Of course it's not all hardware.
I just saw a video demo of a keyboard, maybe it's the Waldorf Blofeld keys? Maybe it was something else, but the line in can get carved into beatmatched slices and you can do that sliced buildup. I'll check the SonicState review and see if it's in there.
EDIT- It was the Sonic State review of the Virus including a new feature called Atomizer you apply to the audio inputs.
