Newbie alert: Combi mode

Hi folks. Just got my Kronos X and I'm thrilled beyond thrills. What a machine.
As good as the manuals are, they are a bit sparse in real world examples, so I need help learning the Combi mode, and I have a couple of questions.
1) For the sake of practice I imagined a case where I have to play a cowbell in my left hand while playing piano in my right. And since not a single cow where about I need to play it on the kronos. I placed the piano on track 1, and a drumkit on track 2. I used the keyboard zones to isolate the cowbell, G#4, and now I want to move it down to A#0. What do?
I haven't figured out sampling yet, but I imagine that could be an option? If so, what do?
2) say I have a Combi with 4 sounds, piano and strings, Rhodes and pad. Is it possible to assign a pedal or a SW button to mute the tracks so I can have piano and strings as a default, and rhodes and pad when I hit the pedal/SW?
