I'm having a hard time understanding how I could control different instruments, effects, or anything whatsoever in any DAW.

I got my KP3 to work in Ableton Live and Logic on let's say one effect unit. But is it possible to use KP3 Programs (P.001, P.002...) so that when I change Programs, it's a totally new layout to program? Or in simpler terms; when I switch Programs it switches MIDI channel so I could configure my settings on a new effect?

No, KP3 is designed mainly for Live performance.

Since there's no VST KP3 Editor, GLOBAL can receive only one MIDI Ch. controlled by DAW.

Only when used as EXT.CTRL, you can assign any transmit/control MIDI Ch. to any assignable KP3 buttons, 1 slider, 1 knob and the Pad separately.
