On XP-50, I can have a pattern play the whole phrase that includes multiple instruments Drums, Base, Piano etc. So I can actually play different parts of the song by touching different keys.

On Korg not sure I can do this. A pattern plays one instrument only.
Can I have a pattern play a complete phrase and not just one part?
If a Song can be assigned to a Key, that could work ...

yes it can be done.

Assign a different instrument to each track and different midi channel and that should work

Not sure what you mean. Each track has its own instrument and MIDI channel as default behavior. That doesn't let you build a pattern that crosses channels or instruments. Please explain what you mean with steps
