The "encoders" are just regular potentiometers. Find ones that are the same size, value (resistance), taper and pinout and they should drop right in. The LEDs are probably just basic ones. The Microkorg is an analog modeling synthesizer, so no, it's not possible to get an authentic acoustic piano sound. With some programming chops you can create a sound that resembles a piano though. I understand the concept of CC messages and whatnot, but do you send all three of those values at the same time? In succession? How do you make setting on the MicroKorg to accept those messages?
