On the Global-page I turned MIDI Controller 1 OFF and set Joystick-X to CC 1 Modulation. Now I would expect the Joystick to react when using the Mod-Wheel on the keyboard, but this changes the Mod-Wheel of the Wavestation like nothing was changed. Did I miss sth.?

No, what is happening in the global page is that by setting the joystick in the way that you have, it is receiving the movement of the mod wheel as a controller input, but it won't reflect it visually. At least, that is the way that I think it works. To hear it, the joystick will have to be programmed to be controlling some parameter(s) of a sound or an effect.
