playing into my computer to generate sheet music?
Is there any affordable Mac software out there to generate sheet music by hooking up my X50 to my computer and playing into it?
Finale and Sibelius are two popular scoring packages I believe. They both offer a bunch of different versions at different price points.

I have tried Sibelius v4 with limited success. The problem I have is that Sib doesn't recognize the X50 and won't play back the same sounds I use.
Example: I record a stave using 'Bowed Strings' but Sib won't play back the Bowed Strings sound, or it won't play back anything or it'll play back some other sound or it'll play back quick single notes when it's supposed to 'hold' a chord.
Neither Korg nor Sibelius plan to create a sound set (I talked to tech support from both companies) to allow the X50 to be recognized by the software.

My wife is a music teacher and one thing we learned early on is that DAWs and Sheet Music generators are often two different products. A DAW if it will print music at all generally only has basic formatting options and so does it rather poorly if you're looking to publish it for example.
Other products are basically word processors that happen to specialize in staffs and notes instead of words. They will often have basic MIDI in/out capability, but it's only there to allow ease of input and verification.
If someone has found something that is great at both I would love to know about it.
