ok, I've brought 2 exb-pcm boards. One thing I want to check before I install them.. do I install both boards in the Triton at the same time and then load the files for each of them afterwards, or should I install 1 board and its file and then the second board and files? Anything I should be aware when fitting them?

Install both boards at the same time. Order doesn't matter, PCG will "find" correct board if it's installed.
Exercise due caution when installing; don't bend or force fit anything, don't touch contacts, beware static - same as you would in installing PC memory.
... look for loose change and tools, then close 'er up.
------------------
Load .pcg data for each EXB: there are two files on each EXB factory disk; one loads to C (D blank) and one to D (C blank). If I remember correctly, they may also overwrite A & B (factory) as well, because some combis use factory voices.
You can, if you want to be REALLLLY cautious open the PCG's folders and load programs, combis, kits and arps separately -- this is a good option if you have 2nd hand PCG files (like those posted here) that may not have both C & D versions (I dunno what EXB's you're loading for or what's in all the EXB PCG's here - just sayin' it's something to be aware of.) -- and if you received only the EXB's you'll want to pull the associated .pcg's for each to make your own disks.
------------
Tell your wife you'll see her next Thursday. Lock your door. Start playing. Have fun.
