I'm kind of into a dilemma with Analog Synths, I don’t know if I should buy a Moog Sub 37 or a Dave Smith Instrument Pro 2. I was actually going for the Moog Sub 37 but when the Pro 2 came out I’m kind of more impressed with the Demos I’ve heard so far.

It's very difficult to compare those. If you were to simply make a feature list the Pro 2 would likely come out on top. It's very much like a mono version of the Prophet 12 with a few extra features.
But it's not just about a list of features. How will you be using it? If you want to program complex sounds the Pro 2 is probably a better choice. For the more traditional analog style the Sub 37. But you can still do some pretty interesting things with the Sub 37 mod busses.
I have the Sub 37 and Prophet 12 and I find myself drawn to the Sub 37. To me it has a warmth that you only get from 100% analog. And something about it just makes it fun to play and tweak.

Synths by Moog and Dave Smith are very different. Comparing Sub 37 to Pro 2 is like to compare a trumpet to a violin, if I may say so.
It only depends on the sound you are after. I guess that for the famous Moog sound you will need the Moog. Don't expect it from the Pro 2.
Just compare the architecture of the audio engines. The Sub 37 provides two VCO with traditional Moog waveforms. The Pro 2 has four digital oscillators with more waveforms than a usual "analogue" synth. The modulation capabilities and external interfaces of the Pro 2 seem to be more flexible then those of the Sub 37. I have a Prophet 8 only, but I expect that the Pro 2 can generate more different kinds of soud than the Sub 37.
But as allways, most hardware synths have one or more special tricks up their sleeves. The Sub 37 comes with Filter-Feedback and Multidrive and the Pro 2 with the sound shaping capabilities of the Prophet 12, which are completely different tools. My guess is that the Sub 37 might be better for deep gritty sounds or roaring leads like a distorted guitar, but it's a guess only.
Best advice is, take some time and check them out and - may be - you will end up by taking both.
