I know not many people still post on these forums, but hopefully I can find some help.
I would like to recreate the patch that is being used on the R3 in this video, but I just have no clue how to program it (more specifically, how does he control what seems to either be the filter or the amp volume by pressing the keys without it affecting the pitch). Any suggestions are appreciated, thanks.

I'm not sure that I saw the guy controlling the filter or amp volume with the keys...
But the 2 obvious ways to control a parameter by the keys is using keyboard tracking and keyboard velocity.
The first one modulates a parameter based on the key itself (low to high). The second is based on how hard you actually hit the key.
All EGs have a velocity sensitivity parameter. On top of that, by default EG1 controls the filter cutoff and EG2 controls the amp section. The filters have a also a keytracking parameter for the cutoff frequency.
Last but not least, both keytracking and keyboard velocity can be used as a source of a virtual patch to control almost any parameter as destination of the patch.
