On the VBeats itself I do not think that you can do it - if you use the VBeats just as a "sound module" and trigger the sounds with external Midi-equipment it should be possible.
Additionally you could let your VBeats "swing" as I showed in my YT-Video

Yes, eg. with a Midi-Keyboard, DAW&PC, Midi-Controller etc.
The Midi-CCs for the different sounds are: (NOT velocity sensitive !!!)
36 Kick
38 Snare
39 Clap
42 Closed Hihat
43 Lo Tom
46 Open Hihat
49 Crash
50 Hi Tom
67 Agogo
75 Clave
Have a look at the midi-implementation-chart of VBeats for more details on Midi-CCs
Pls note that usually drum-computers send/receive on channel 10, suggest to set VBeats also to channel 10 ...
You might need to have a look at global Settings to set Rx ON.

To be honest - I do use velocity mainly on the VBass BUT the MIDI-implementation-chart of VBeats says "V = 1-127" so to answer your question: it should listen to MIDI-velocity (but I haven´t tried it...)
Suggest you try it again and give us a short feedback

Thanks Chris. I wonder whether we should petition Korg to update these devices and make them behave as documented. I too also discovered the Sample doesn't respond to midi velocity as you stated. This is peculiar as there really isn't any reason why it shouldn't. I guess with the Beats being analogue there may be some archaic reason but certainly not in the cases of the Sample. And for crying out loud Korg, make the Sample respond to pitch over midi, it truly would be a killer product then!
