I'm curious about the sources of the Sad Piano and Very Old Piano patches.
Anyone have any insight? Are they particular pianos that were sampled? Or filtered or otherwise altered forms of standard piano patches?

No, they are not resampled pianos. The Very Old one is based on the Korg Kross Grand Piano sample and the Sad piano is based on the Accoustic piano sample (or vice versa - I don't remember anymore). But the sound engine is quite flexible to alter the sound both in a static and dynamic way. E.g. the random LFO can be used to offset the pitch for every note a bit to make it sound a bit detuned, and so on. And don't forget the plenty of effects that can be applied.
