Hi Nigel,
Sorry if I confused you back there! Yes, I meant a Program Change to change the program/sound. Control Changes do all the other stuff, of course - pan, volume, whatever...
With regard to playing two sounds across the keyboard, one with each hand and with different panning, you can do that. Here's how I did it;
Click the Track Parameter button along the bottom row. then click the MIDI button. I'm going to use track 1 and track 2 for the sounds. Change the MIDI channel for track 2 from '2' to '1'.
Now, click the MIDI Filter Zone button on the bottom row, then the Keyboard Zones button and set the Key Range for each of the two sounds.
Back on the main page, choose your sounds for the tracks 1 and 2, and adjust the pan and volume level (by inserting a CC message at that point in the song).
You can program in whatever changes you want, for the moments when you are going to be playing different sounds. So if you need to change to just one sound again after the chorus, at that point you can program in all you need - for example, the key range, MIDI channels, program and control changes. Once those are programmed in, you should be able to just play and not even think about the changes, since they'll already be there.
My CC knowledge is slightly patchy, so although I would know how to do the necessary Program and Control Changes in the MIDI event page, I would record the other stuff in 'manually', i.e. while the sequencer is running, I would manually alter Track 2's chorus setting of MIDI Channel 1 to the verse setting of MIDI Channel 2 so that you're only playing whatever sound you have set up for the verse on Track 1, and it would appear as an 'EXCL' on Track 2's MIDI event page.
It's easy enough to do, but perhaps difficult to explain clearly without actually being there, so do come back if this doesn't entirely sort it.

Thanks Pete. I’ll try it again when I get home. I had previously done the stages you mentioned up to the end of the 5th paragraph, but then when I put a Prog Ch into the midi event editor at say bar 8(...change from the left hand playing synth pulse/stabs to a phased pad), the right hand sound also changed to the phased pad sound...presumably because it’s on the same midi channel. I’ll investigate later!
