Hello
how to adjust the amount of sustain on the damper pedal.
Let's say I want to hold the pedal down but I don't want the piano to sound like strings or distort.

That really shouldn't happen as the result of sustain pedal relates to the actual way the sound is configured.I don't want the piano to sound like strings or distort

Take yer foot off the pedal.
You have to play the pedal same as the keys, down for on and up for off. Learn to do it, it's all part of playing keyboards.
