Limiting the Poly

Is there a way to limit the poly for a sound - for example a guitar has 12 strings so a max poly of a single guitar could be 12 notes, I remember a synth I've used a long time ago you could do it and hold the sustain pedal and roll chord notes and the first note played would be dropped as the poly limit was exceeded then the second, third, etc and so-forth as you played additional notes - almost like a queue. This might make more sense

The numbers would be the note played

It seems you can set it to Mono or Poly only.
