I would like to make use of the assignable foot pedal, but I don't want to use it for the same thing for each patch. For example, I might like it to do master volume when I'm playing organ, but then on guitar I want to use it for some sort of wah-wah effect.

Here is the strategy I am considering. Can someone please tell me if this makes sense. (I am kind of a newbie.)

Assign whatever parameter I want control with the pedal to controller Knob B4 for every patch. Then assign the pedal to controller B4.

Does that make sense? Is there a better way?

Not sure, but it might be possible to assign the foot pedal to a CC in the global setting and then use this CC to control the desired parameter in the patch/performance.

But I agree that things would be easier if the pedal assignments were configured per patch/performance and not globally.

I have a Triton Extreme (getting my M50 today... can't wait).
However in the Triton Extreme it is not possible and possibly it also yields for the M50.

There is however a way to do it. Assign it as a CC (don't know the exact number here; no synth around). Then use some guitar effect or any setting as the same CC value as the pedal.

With volume there is (at least ont he Extreme a problem). There is no setting directly so what I normally do is to use a effect (equalization) and change the CC to the values of that effect. It costs one insert effect tough but you can change it for one or more sounds.

Hope this helps.
