Everytime I save a sample (WAV), I get two versions L and R. Just wondering if I can save them as one sample (Stereo).

Actually the Pa keyboards use two mono samples -L and -R whenever stereo is required. So when you save the samples as WAV files, it is just copying what it uses internally.
I know there is a stereo WAV file format but if you were using it to generate samples for the Pa keyboards it would have to be split into -L and -R components before importing them. Take a look at the Grand Piano RX samples in OSC1 and OSC2 in Sound edit mode.
I think Extreme Sample Converter may be able to combine two mono -L and -R samples into a single stereo file. Sharp uses it so you could aks him to check it maybe?

That's not unusual though. Even Pro tools doesn't work with Stereo files. It can bounce a session to a stereo file, but it can't import it as one stereo file. That's why it always converts it to 2 mono files that can be seperated later on if needed. I've seen a lot of samplers that work that way as well.
That explains why some samles have "(mono" and some have have "(stereo)" after them.
I also noticed that some WAVs I was loading into the sampler didn't sound as "dynamic" as they did on my computer. I tried re-creating the effect but couldn't get it the same, but that's just my lack of experience. I'm wondering if you've also noticed this before ?
